Actually, that wouldn't do her as much good as making the Sawmill look like it's loosing more money than it actually is, because 1) she could keep the extra money, and 2) could recover easily if Josie sells it and Jerry (the landowner) buys... And based on a conversation jerry and Catherine had in the first episode (or was it the movie?)
